Ted and Jan's Homemade Granola

Since we have started the Whole 30 diet we have made a real effort to eat healthier. Our granola recipe is a variation on one we found in the AARP magazine by Myra Goodman.

Above is a mixture of 5 Cups of rolled oats, 1 C of shelled sunflower seeds, 1 1/2 C chopped raw almonds, 1/2 C chopped pecans, 3 Tbsp cinnamon, 2 Tsp nutmeg, 1 C VT maple syrup, 1/3 C canola oil
Bake at 325 degrees for 25 mins, stir then bake additional 25mins on a lined baking sheet

After baking add dried fruit of your choice and mix...we added dried apricots, raisins, craisins and dates (total of 2 cups)

Let the mixture cool completely and store in a gal zip lock bag.

In the morning we have 1/3 C of granola with fruit like blueberries, strawberries, pineapple, raspberries,  banana and almond milk. What a great way to start your day. This is wonderful with yogurt, also.

April Spring Break Visit

Met Colby, Joe, Stella and Foster in Cocoa Beach for three days of fun in the sun. The weather here in FL was much nicer than VT.

Stella and Foster loved the salt water pool at the vacation rental house.

The weather at the beach was great. Cocoa Beach sand was just a five-minute walk from our rental.

Back in Ocala, the Bakers were joined by Uncle Cameron for a visit at our house.

Uncle Cameron entertaining his niece and nephew.

Ocala Petting Zoo was a big hit!

We enjoyed more rays at Nona and Grandpa's pool.

Stella enjoyed traveling with Nona in the golf cart...
